Fersk Suppe – a traditional Norwegian dish in which a topside joint of beef is boiled with white cabbage, celeriac, carrots and leeks. First the liquid is served with some of the vegetables as a soup. Then the meat is dished up, with more of the vegetables, boiled potatoes and a sweet and sour white onion sauce.

My mum is terminally ill with Motor Neurone Decease, and has now got to the stage that she should only be eating soft foods (she struggles with her swallowing). It is becoming more and more of a challenge to cook for them. Lots of sauce, overcooked vegetables and meat that falls apart works for her.
